I'll try to answer your questions in order:<br>
1. Hearing back messages: It will be doable with irc chat, It's
called logging; Although IT's a hastle to set this up but there are
websites which will let you to search a channel's logs.<br>
2. Chatting vs mailinglists: You've pointed out a good advantage of
MailingLIsts over IRC, You can read things later but live chat is
live chat. To be honest, I think that they are a different
experience. For example, We could get onto RWP IRC chatroom and
text about things for an entire night live., Or help someone or have
assistance during a DAW operation.<br>
3. Finding people on irc chat: IRC is an Idle Chat it means that
some of its users are there for a very long time, And some others
will use scripts to be there and have them alerted when someone call
their name. So basically, You could either wait till you get your
chat going, or get your conversation setup on irc with mails, So
you can get the timing right.<br>

OverAll, IRC chat will not replace MailingList for us, But It's a
very great way to collaborate; assist and get assistance and
exchange quick ideas. You could also write as much as you want
without spamming anyone.<br>

read/listen to old messages. The great thing about a mailing
list is that people can look at it in their own time. I think
keeping a live channel open would probably just result in
getting no work done. I don't really know what it's all about. I
do like the idea of a live chat experience, but it would be a
shame if you couldn't hear it back after the time. Also, there
are only a few of us on this mailing list, so how do we stop
ourselves from missing each other like ships in the night?<br>
