                        Going to Convention? If you're attending either the NFB or ACB Convention, we'd love to meet you. Peggy and Wayne from the "Let's Eat" segment of our podcast, will be at the NFB Convention for the one-day Healthy Fair on June 30 in Orlando. They'll have CD workouts, thumb drives, and the BackTpack¨ for demonstration, so be sure to stop by.

                        Mel will be at the ACB Convention in Minneapolis during regular Exhibit Hall hours. She'll have workouts on CD and thumb drives. Also, Marilyn Miller von Foerster, the creator of the BackTpack¨ will have several models and colors for sale. Make sure to stop by Booth 42 and say hello any time the Exhibit Hall is open.

                        Summer Recipe. Speaking of keeping it simple, what could be simpler than a salad you layer in a Mason jar, chill, and enjoy later? In Podcast 21, Peggy walks us through making this salad. She uses one from a small collection found on the Hungry Girl site.
                        Fruity Bacon Chicken Salad
                        Entire recipe: 294 calories, 8g fat, 658mg sodium, 23.5g carbs, 5.5g fiber, 15g sugars, 35g protein -- PointsPlus® value 7*
                        The smokiness of bacon is so good with the sweetness of fresh fruit! Start layering...
                        Prep: 5 minutes
                        Ingredients: 
                          . 1/2 cup chopped apple
                          . 1 tsp. lemon juice
                          . 2 tbsp. light vinaigrette dressing
                          . 1/2 cup halved cherry tomatoes
                          . 1/2 cup chopped cucumber
                          . 4 oz. cooked and chopped skinless chicken breast
                          . 1 tbsp. precooked real crumbled bacon (like the kind by Oscar Mayer)
                          . 3 cups chopped romaine lettuce
                        Directions:
                        In a small bowl, evenly coat apple in lemon juice.
                        In a 1-qt. wide-mouth mason jar, combine dressing, tomatoes, and cucumbers. Top with chicken, bacon, apple, and lettuce. (Jar will be packed!) Cover and refrigerate.
                        When you're ready to eat, give the jar a shake, and flip contents into a medium-large bowl (or eat right from the jar)!
                        MAKES 1 SERVING
