Hey Dave,
I'd say you're going the right way about this by learning to work with
items, they're very powerful. That said, if you want Reaper to behave
a bit more like you expected out of the box, try unchecking "If no
items are selected, some split/trim/delete actions affect all items at
the edit cursor" checkbox, which you'll find in Preferences under
Editing behaviour.
