However, you can adjust the fade curve and length from the item 
properties dialogue, once the fade has been created, or, if you know 
that you want the fade to be of a certain duration, you can just create 
it from there.

In answer to the other question, there is a way to fade out your project 
with Rea Access but it requires different steps and is less controlable.

You could either put a marker at the place where you want the fade to 
start, select all items, make sure you're at the marker and fade them 
down from cursor, though apparently this isn't always reliable, or you 
could do the following.

Press shift tab, which accesses Rea Access's control surface for master 
track.

Then press tab til you get to automation mode and select either write, 
touch or latch, it really doesn't matter for this application as far as 
I know, pressing enter after you've made your selection.

Ensure that you don't have your project set to repeat by pressing 
control r.

Then press play on your project and hit alt shift cursor down, holding 
them down until the project has been faded to nothing. The trouble with 
this method is that you only have access to the increments to nudge 
volume that you or someone else have defined shortcut keys for. This 
means that, if the length you want your fade to be is too short, that 
the project won't have faded down in time. Likewise, if the desired fade 
length is too long, your project will have been faded down before it's 
finished.

One workaround that an inventive person posted here for this is to 
increase or decrease the project's play rate and then perform the fades 
so that you have the right amount of time to execute the fade by the 
increments you are allowed. Be sure that you have changed the play rate 
properly first before you turn automation for the master track on though.

Once you've done this, press shift tab and turn the automation mode to 
trim/off.

The other major disadvantage to this is that, if you want to undo it, 
there are lots of points to go through, one for each volume nudge.
