You could ride automation with alt-down arrow, which only moves by
1 twentieth of a db at once.
But you can stack actions to get a varying jump to your own needs.

I like patricks trick of spliting items, and then turning one down all 
the way, and then growing the edges of the items to over-lap and that 
simulates a fade.
To the extent you over-lap edges will determine how the fade curve works.

YOu can also manually edit your automation after you either insert 
points manually, or write them with qwerty or control surface.
I am just beginning to explore this in depth, but it gives you a lot of 
control.

There are also fade ins and outs on item settings you can set
for a default curve for each item.
