[Rwp] Midi: The only reason I really don't want to switch to Reaper

Now, if someone can tell me how to deal with this, then I will definitely 
reconsider using Reaper.

Basically, I do a lot of music arrangement with my keyboard.  Yes, my 
keyboard has built in samples that actually are very realistic for what its 
worth.  The only thing is, sometimes, I do like the ability of using midi. 
I've yet to effectively find a way with Reaper and ReaAccess to do midi.

Basically, I need to know how to set my midi channel 1-16.  I also need to 
know how to set the patch.  Say I want a grand piano, or say I want a sax, 
or maybe a flute.  Finally, how do I get the audio from my midi synth to 
play through my speaker monitors with the correct instruments, rather than 
being totally silent when I hit space bar to play.

If I could figure these things out, I'd use Reaper a lot more.  As much midi 
work though as I do, I cannot afford to ditch my current daw until I know 
how to do this, and can effectively sequence a song by hand, and also can 
open an already done .midi file, audibly play it, and change any of the 
instrument patches to something else of my choice on any given track.
