Oh you most definitely can change pitch per track.
You can even change pitch realTime; on the fly, as the track plays.
Press F12 for learning mode, and press the keys around number 4 5 6 on 
the qwerty number row.
Somewhere around there are keys that raise and lower pitch, I forget 
exactly where.
Near there you also get keys to raise and lower the tempo of a selected 
track.
After learning shortcuts press F12 again to exit learning mode.
