i do believe under general in preferences you can change to some extent what undo will let u undo. Also may be useful in under project in preferences you can set whether or not undo history is saved with the project which can be useful as well.

But, I now suspect that those were just getting recorded in addition to the change that was actually recorded in the track. And, all I really needed to undo was the track envelope event.
