I believe there is a command under the Track Menu that enables you to render
a Track to Mono.... I do not know if this is what you are looking for...
Tis a SubMenu from the Item Render Track me thinxst...

Why don't you just copy the item(s) from your stereo track to another
track, then select the properties of all items, change channel mode from
normal to left on one track in item properties, then from normal to
right on the other track, then mix as desired.
It might be easiest if you glue all items on your stereo track first,
which effectively renders them all as one take.
