If you set the midi CC used as a shortcut to control the action: track 
set volume on selected track; or one of the other actions that are 
similar; like set volume on last touched track; or set volume on master 
track; with the options for that CC message set to absolute; with a 
checkmark placed on soft takeover; you won't hear a jump when you begin 
writing automation from a surface; and the last setting when you stop 
writing will fill out to the end of the track; no need to do anything 
special to continue last written level to the end of the track.
In the example automation I posted; I left the pan setting way over to 
one side; in hopes that it would be noticed that the last automation 
setting you write does continue to the end of track.
Of course you need to remember to return the change of volume; pan; 
whatever to what you want to hear for the remainder of the track.
There may be a setting in preferences/automation that changes whether 
automation level fills out or returns to original level by itself; but I 
haven't really got a handle onto that one yet.
