An item is a recording on a track, not a VST plug on a track.
A plug is either a synthesizer or an effect that changes the sound.
You can save many of your settings in your project settings, press 
alt+enter.
You need to study the terms used in all this, so google the word cockos, 
followed by the word glossary.
Copy that list of terms; paste it into your word processer; save it and 
study it, which will make it all so much easier.
