Sorry, I thought for a moment you meant voiceover work.

Anyway, yes, you just manipulate the fader up and down for the 
desired volume changes. This is called auotmation.

Back in the old days, before automation made it onto consoles, 
you'd literally have eight hands on the board adjusting aspects of 
a mix as they went by.
