for your specific question, just arrow to the track you want to work on, and 
hit the tab key.  This will take you into the window where you can set all 
the things you refered to.
Arming a track for recording is F7 by the way.
Another extremely handy tool with ReaAccess is using the F12 key for 
training mode.
You can hit any key, or combination of keys when you toggle training mode 
on, and it'll tell you what those keys do.
I have found many functions this way that weren't otherwise obvious.
F4 also allows you to enter a search term, and that will bring up a list of 
functions and actions that you can both perform, and assign short cut keys 
to for later use.
